Roasted Veggie Medley

Ingredients: Makes 8 servings

  • 2 cups carrots, cut in wedges

  • 2 cups whole green beans

  • 1 large red onion, peeled & cut in strips

  • 2 medium red pepper, cut in strips

  • 2 medium yellow peppers, cut in strips

  • 4 cloves garlic, minced

  • 2 tbsp olive oil

  • 2 tsp sweet basil

  • 2 tsp thyme (can use fresh thyme sprigs)

  • sea salt and black pepper



Directions:

  1. Preheat oven to 400 ° F. Spray baking dish with cooking spray.

  2. In large mixing bowl, add veggies, olive oil, garlic, basil, thyme, sea salt and black pepper.

  3. Mix well, making sure veggies are coated evenly.

  4. Place veggies in baking dish and roast for 15-20 minutes.

  5. Toss veggie medley and roast for additional 10-15 minutes or until vegetables are tender.
