Healthy Dinner Under 60 Minutes

Shrimp and Broccoli Rice

Ingredients: Makes 8 servings

  • 2-3 cups Basmati or Jasmine Rice, prepared according to directions.

  • 1 lb large shrimp, peeled & de-veined

  • 2-3 cups fresh or steamed fresh frozen broccoli

  • 2 eggs, whisk lightly

  • 2 tbsp extra virgin olive oil

  • 1 medium sweet onion, chopped

  • 2 tbsp green onions or chives

  • sea salt and black pepper


Directions:

  1. Prepare rice according to directions. Set aside.

  2. Add olive oil to large skillet over medium heat.

  3. Add onions. Saute for about 3-5 minutes.

  4. While sautéing onions, add salt & pepper to eggs. Whisk lightly; set aside.

  5. Add shrimp to skillet. Saute shrimp until they are almost done.

  6. Add fresh or steamed fresh broccoli. Saute for about 5 minutes, stirring constantly.

  7. Push ingredients to one side of the skillet. Add the eggs & quickly scramble eggs.

  8. Stir all ingredients together.

  9. Add cooked rice.

  10. Stir all ingredients together. Sprinkle with green onions or chives.

  11. Serve with mixed green salad.
