Healthy Dinner Under 60 Minutes
Shrimp and Broccoli Rice
Ingredients:
Makes 8 servings
2-3 cups Basmati or Jasmine Rice, prepared according to directions.
1 lb large shrimp, peeled & de-veined
2-3 cups fresh or steamed fresh frozen broccoli
2 eggs, whisk lightly
2 tbsp extra virgin olive oil
1 medium sweet onion, chopped
2 tbsp green onions or chives
sea salt and black pepper
Directions:
Prepare rice according to directions. Set aside.
Add olive oil to large skillet over medium heat.
Add onions. Saute for about 3-5 minutes.
While sautéing onions, add salt & pepper to eggs. Whisk lightly; set aside.
Add shrimp to skillet. Saute shrimp until they are almost done.
Add fresh or steamed fresh broccoli. Saute for about 5 minutes, stirring constantly.
Push ingredients to one side of the skillet. Add the eggs & quickly scramble eggs.
Stir all ingredients together.
Add cooked rice.
Stir all ingredients together. Sprinkle with green onions or chives.
Serve with mixed green salad.
