Southern Black-Eyed Peas

Sautéed Tilapia & Vegetable Pizza

Healthy Dinner Under 60 Minutes

Southern Black-Eyed Peas with Sausage

Ingredients: Makes 10 servings

  • 1lb black-eyed peas (any beans)

  • 12oz beef smoke sausage

  • 2 tbsp extra virgin olive oil

  • 1/2 medium sweet onion, chopped

  • 1/2 green bell pepper, chopped

  • 6 garlic cloves, chopped

  • 1 celery stalk, chopped

  • 10 cups of water or low sodium chicken stock

  • 2 bay leaves

  • 1 tsp smoked paprika

  • 2 tbsp parsley

  • sea salt and black pepper

  • 2 cups Basmati or Jasmine rice


Directions:

  1. Rinse beans and pick out the bad beans. Put beans on side.

  2. In a skillet, heat olive oil over medium heat.

  3. Cook tasso or smoke smoke sausage for 5 minutes. Remove from skillet and set aside.

  4. Add onions, garlic, and bell pepper to same skillet and saute seasonings for 5 minutes or until slightly translucent.

  5. Add cooked seasoning, paprika, black pepper to beans. Stir well.

  6. Add 10 cups of water or stock, bay leaves.

  7. Bring to a boil and then reduce heat to medium-low. Simmer for 2-2 1/2 hours.

  8. Add smoke sausage or turkey tasso and continue to simmer for approximately 30 minutes.

  9. To finish, add parsley

  10. Optional: Try adding cooked/chopped chicken breast to beans instead of turkey tasso/sausage.

  11. Prepare Basmati or Jasmine rice according to directions. Serve beans over jasmine rice. You can substitute with brown rice or enjoy with no rice at all.
