Healthy Dinner Under 60 Minutes

Sweet Corn Succotash

Ingredients: Makes 8 servings

  • 4 cups sweet corn

  • 2 cups green zucchini, chopped

  • 1 medium bell pepper, chopped

  • 1 medium sweet onion, chopped

  • 3 garlic cloves, peeled and chopped

  • 2 tbsp extra virgin olive oil

  • sea salt and pepper


Directions:

  1. Heat the olive oil in a saute pan over medium heat.

  2. Add the onion and saute until they become translucent.

  3. Add the garlic and saute for one more minute.

  4. Add the bell peppers and the corn, cooking until veggies soften.

  5. Fold in the cilantro and season to taste with sea salt and pepper.
