Turkey Meatballs in Tomato Sauce

Healthy Dinner Under 60 Minutes

Turkey Meatballs in Tomato Sauce

Ingredients: Makes 10 servings

  • 2.5 lbs ground turkey

  • 1 medium sweet onion, chopped

  • 2 garlic cloves, chopped

  • 1 green bell pepper, chopped

  • 2 tbsp extra virgin olive oil

  • 4 tbsp parsley

  • 2 tbsp oregano

  • 2 tbsp thyme

  • 1 egg

  • 1 cup panko bread crumbs

  • 1 tsp cayenne pepper

  • salt and pepper

  • 1 jar of Bertolli Tomato & Basil tomato sauce or preferred sauce

  • 1 lb whole wheat angel hair pasta, prepare according to directions


Directions:

  1. Preheat oven to 425°F.

  2. In large skillet over medium heat, add 1 tbsp olive oil and 1/2 of chopped onions and garlic. Saute for about 5 minutes. Set aside and let cool.

  3. In large mixing bowl, add ground turkey, saute onions and garlic mixture, egg, 2 tbsp parsley, 1 tsp oregano, 1 tsp thyme, bread crumbs, salt and pepper. Mix well and shape into 2.5 oz meatballs.

  4. Spray baking sheet or cover baking sheet with parchment paper/foil. Place meatballs on baking sheet. Bake for 30-45 minutes. Remove and set aside.

    Tomato Sauce:

  5. In large skillet over medium heat, add olive oil and bell pepper. Saute for 5 minutes.

  6. Add remaining onion and garlic mixture. Season with salt, black pepper, and cayenne pepper.

  7. Add jar tomato sauce or homemade sauce and remaining herbs.

  8. Stir well and cook for about 5 minutes.

  9. Add turkey meatballs. Cover and simmer sauce for 30-45 minutes.

  10. Serve over whole wheat pasta.
