Healthy Dinner Under 60 Minutes
Turkey Meatballs in Tomato Sauce
Ingredients:
Makes 10 servings
2.5 lbs ground turkey
1 medium sweet onion, chopped
2 garlic cloves, chopped
1 green bell pepper, chopped
2 tbsp extra virgin olive oil
4 tbsp parsley
2 tbsp oregano
2 tbsp thyme
1 egg
1 cup panko bread crumbs
1 tsp cayenne pepper
salt and pepper
1 jar of Bertolli Tomato & Basil tomato sauce or preferred sauce
1 lb whole wheat angel hair pasta, prepare according to directions
Directions:
Preheat oven to 425°F.
In large skillet over medium heat, add 1 tbsp olive oil and 1/2 of chopped onions and garlic. Saute for about 5 minutes. Set aside and let cool.
In large mixing bowl, add ground turkey, saute onions and garlic mixture, egg, 2 tbsp parsley, 1 tsp oregano, 1 tsp thyme, bread crumbs, salt and pepper. Mix well and shape into 2.5 oz meatballs.
Spray baking sheet or cover baking sheet with parchment paper/foil. Place meatballs on baking sheet. Bake for 30-45 minutes. Remove and set aside.
Tomato Sauce:
In large skillet over medium heat, add olive oil and bell pepper. Saute for 5 minutes.
Add remaining onion and garlic mixture. Season with salt, black pepper, and cayenne pepper.
Add jar tomato sauce or homemade sauce and remaining herbs.
Stir well and cook for about 5 minutes.
Add turkey meatballs. Cover and simmer sauce for 30-45 minutes.
Serve over whole wheat pasta.
