Healthy + Simple Salad Recipe:
The Ultimate Sweet Chili Chicken Salad Recipe
Ingredients: Makes 2 servings
1 lb chicken breast, cooked and sliced
2 tablespoons extra virgin olive oil or avocado oil
4 cups spring mix salad
1/2 cup carrots, shredded
1/2 cucumber, sliced
1/4 red onion, sliced thinly
1 tomato, sliced or cubed
2 hard boiled eggs, chopped or sliced
1/4 red onion, sliced thinly
Mezzetta Sliced & Tamed Jalapeno Peppers (optional)
1/4 cup Baby Bella Mushooms, chopped
1/2 cup fresh broccoli florets
1/4 red, orange, and yellow bell pepper, chopped
1/4 cup Panda Sweet Chili Sauce
Directions:
In large mixing bowl, combine or layer spring, carrots, bell peppers, broccoli florets, and mushrooms. Refrigerate
Cut or chop cucumbers, tomatoes, and hard boiled eggs. Set Aside
To Prepare Chicken: slice or cube chicken breast. Be sure to trim off any fat.
Season chicken according to preference. We used Badia Complete Seasoning.
Heat olive oil in medium skillet. Saute chicken breast until cook; usually 7 minutes per side.
When chicken is cooked, top with Panda chili sauce. Stir and let rest.
Assemble Salad: Layer spring mix and veggies from mixing bowl. Top salad with cucumbers, red onions, hard boiled eggs, tomatoes, jalapeno peppers, and chicken.
Top with your preferred salad dressing or vinaigrette. Enjoy!
