Chicken Vegetable Soup
Ingredients: Makes 8-10 servings
10-12 cups water
3tbs low sodium chicken base
8oz grilled or roasted chicken breast, chopped
1-2 cups baby carrots
2 cups yellow corn
2 cups broccoli florets (cooked)
2-4oz angel hair whole wheat pasta
4 cloves garlic, minced
2 tsp granulated garlic
2 tsp black pepper
green onions, chopped
sea salt & black pepper to taste
Directions:
In a large pot, bring water to a boil.
Add chicken base & stir until it dissolves.
Add corn & carrots. Boil until carrots are slightly tender.
Add garlic, black pepper, broccoli florets & granulated garlic. Stir well.
Add green onions & chicken. Bring soup to slight boil.
Add pasta. Stir until pasta is is cooked (2-4 minutes.)
Top with green onions.
