Chicken Vegetable Soup

Ingredients: Makes 8-10 servings

  • 10-12 cups water

  • 3tbs low sodium chicken base

  • 8oz grilled or roasted chicken breast, chopped

  • 1-2 cups baby carrots

  • 2 cups yellow corn

  • 2 cups broccoli florets (cooked)

  • 2-4oz angel hair whole wheat pasta

  • 4 cloves garlic, minced

  • 2 tsp granulated garlic

  • 2 tsp black pepper

  • green onions, chopped

  • sea salt & black pepper to taste


  1. In a large pot, bring water to a boil.

  2. Add chicken base & stir until it dissolves.

  3. Add corn & carrots. Boil until carrots are slightly tender.

  4. Add garlic, black pepper, broccoli florets & granulated garlic. Stir well.

  5. Add green onions & chicken. Bring soup to slight boil.

  6. Add pasta. Stir until pasta is is cooked (2-4 minutes.)

  7. Top with green onions.
