Peanut Butter Cookies
Ingredients: Makes 14-16 servings
1 cup of peanut butter (smooth, chunky, natural, etc.)
1/4 cup - 1/2 cup granulated sugar
1 egg
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 cup dark chocolate chips (optional)
Directions:
Preheat oven to 350°F.
In mixing bowl, stir peanut butter and sugar until smooth.
Mix in egg, vanilla extract, and baking soda until “dough” thickens.
Fold in chocolate chips or ingredient of choice.
Scoop 1 tablespoon of dough and roll into ball.
Place them about 2 inches apart onto prepared cookie sheet.
Press criss-cross pattern into the top of each cookie with the back of the fork.
Bake for about 10-12 minutes.
Allow cookies to cool for about 5 minutes before removing to a rack or plate to cool completely. Enjoy!
